  1. Provide Granny Smith Apples cored and diced
  2. Take Small bunch of coriander chopped
  3. Prepare white crab meat
  4. Get small red chilli deseeded and chopped finely
  5. Use zest of a lemon
  6. Use ginger grated
  7. Provide Mayonnaise
  8. Take an iceberg lettuce cut into strips
  9. Take Seafood Season that contains fennel
  10. Provide GR's Vinaigrette (see ingredients below)
  11. You need extra virgin olive
  12. Provide white wine vinegar
  13. Take sea salt and pepper
  14. Provide GR's Lemon Confit (see ingredients below)
  15. You need large lemon washed
  16. Use caster sugar
  17. Take Halved lemon grass
  18. Get water
Steps to make Crab and Apple  Salad:
  1. Make Confit by slicing lemons very thin. In a pan add sugar and 150ml of water, stir sugar until dissolved. Add the lemongrass when the liquid boils. Simmer for a few mins and add the lemon slices. Poach for about 10 mins. Leave to cool on the side until needed.
  2. In a bowl mix apples, coriander, crabmeat, chilli, lemon zest, ginger, slices of lemon confit and mayonnaise.
  3. Vinaigrette- mix the oil, white wine vinegar and salt/pepper. Use a blender or whisk until it emulsifies. Keep to one side.
  4. Place shredded lettuce in a bowl and pour in the vinaigrette.
  5. On a plate place the lettuce and spoon the crab mixture, sprinkle seafood seasoning and add extra coriander.
